Garlic Shrimp and Pappardelli Pasta
Serves 2-4
For those who like seafood in a tomato sauce with pasta this is a must
try! Garlic
Is important in the cooking that we do, but at the restaurant, we must,
of course exercise moderation. At home, however, you can go for the gusto!
Ingredients;
1/2 Pound medium shrimp, peeled and de-veined
1/4 Cup button mushrooms, sliced
2 Teaspoons garlic ,chopped
2 Teaspoons olive oil
1 Roma tomato, chopped
3 Fresh basil sprigs
1/4 Cup spinach, chopped
2 Cups prepared pasta sauce
1/2 Cup chicken broth
Salt and pepper to taste
12 Ounces lasagna noodles, cooked
Parmesan cheese, grated
Cooking instructions;
In a hot skillet or sauté pan,, add the olive oil, garlic, mushrooms
and shrimp. Cook for about 4 minutes at medium high heat. Pour the
pasta sauce into the pan, bringing it to a slow simmer. Add the chopped
basil, spinach, tomatoes, and the chicken broth, cooking for about
3 more minutes. Now season with salt and pepper to taste. Serve over
cooked lasagna noodles that are cut into strips, topping with grated
Parmesan cheese.
Wine Suggestions; Frescobaldi-Robert Mondavi Lucente, Tuscany or Luna
di Luna Chardonnay- Pinot Grigio
