Peel and Eat Garlic Shrimp
Serves 4-8
This reception favorite is the hallmark of any get together.
Ingredients;
2 Pounds medium, shrimp, shell on.
1/2 Pound margarine
3 Scallions, chopped
2 Tablespoons garlic chopped
1 Tablespoon black pepper, cracked
1 Lemon cut into wedges
1/3 Cup white wine
2 Tablespoons cornstarch mixed with 2 tablespoons of water
Hot sauce or Cajun seasoning to taste
Salt to taste
Cooking Instructions;
Sauté the first 5 ingredients on high heat until shrimp are cooked through:
this will take about 5 minutes. Squeeze the lemon into the pan, adding
the wedges to the pan as well. Add the wine and heat to just below boiling.
Mix in the cornstarch mixture, heating until thick to create a tasty
sauce. These shrimp can be eaten hot our cold.
If served hot, the shrimp are ready and could now be served on a bed
of shredded lettuce with additional lemon. If served cold, use the following
”ice-bath”
Method. To cool quickly, place shrimp in a bowl into which they fit easily.
Place this bowl inside another bowl that has at least two trays of ice
and ample cold water in it. Allow shrimp to stand for several minutes;
stir: repeat. The shrimp should be chilled in about 30 minutes.
